and my Navajo Taco Recipe

From the kitchen of: Cheryl Hamons Nowka                     Preparation time: 30-40 minutes
                                                                                      Number of servings: 4-8
INGREDIENTS
2 cups flour 2 tablespoons baking powder
1/4 teaspoon salt 2 cans taco sauce
1/2 lb grated cheddar cheese 1/2 head lettuce
1 chopped onion 1 diced tomato
cooked red chili w/beans                           ....OR...
Ingredients for red chili:
2-3 lbs lean hamburger meat
1-2 tablespoons crushed red picante peppers
10-20 dashes tobasco sauce
2 tablespoons apple cider vinegar
1 teaspoon garlic powder
1 teaspoon salt
1 chopped onion
6 oz can tomato paste
2, 4 oz cans of diced green chiles
2-3 cups cooked and drained pinto beans
cooked taco meat
Ingredients for taco meat:
2-3 lbs lean hamburger meat
1 teaspoon garlic powder
2, 4 oz cans diced green chiles
1 teaspoon salt
1 chopped onion
INSTRUCTIONS:         1. Fried Bread        2. Red Chili        3. Taco Meat
Option: Serve Fried Bread with Red Chili or with Taco Meat

1. Fried Bread: Mix flour, baking powder and salt then add enough water to make a workable dough. Pinch dough apart in 4 equal sized pieces. Knead each part 4 times and roll out round to fit a 10 inch skillet. Lay 1 piece at a time in skillet with hot cooking oil. Let fry until it bubbles and turn over and let other side get golden brown. Drain each bread piece on a paper towel and place each one on a separate plate.

2. Red Chili: Brown hamburger meat in a tiny bit of water in a pan with chopped onion, salt and garlic powder. (Do NOT add black pepper) Don’t allow meat to boil dry and fry but don’t get it too runny either. When the meat is done add red crushed peppers, tomato paste, 10-20 dashes tobasco sauce and apple cider vinegar and stir in just enough water to keep mixture thick fairly thick. Let cook on medium about 15 minutes then add beans and diced green chiles and simmer about 5-10 more minutes. Green chiles burn easily so stir occasionally.

3. Taco Meat: Brown hamburger meat in a tiny bit of water in a pan with chopped onion, salt and garlic powder. (Do NOT add black pepper) Don’t allow meat to boil dry and fry but you don’t want it watery either. When the meat is done add chopped green chiles and simmer for about 5-10 more minutes. Green chiles burn easily so stir occasionally.

Add layers to fried bread in this order:
1. red chili or taco meat,
2. taco sauce to cover,
3. chopped raw onion,
4. chopped lettuce,
5. diced tomatoes and
6. grated cheddar cheese.
Some like to add sour cream on top of these layers and if you really like hot food dishes then top this off with your favorite hot sauce. It is said in NM & AZ.. frying hamburger makes it greasier than boiling it like this. Never add black pepper in any mixture with green chiles, it makes them hotter! These tacos are so large that we cut them in half for those that don't eat as much as the men in my family.
